Whole Roasted Red Peppers

Roasted peppers are beautiful, delicious, and truly easy to prepare. Use them to add color, flavor, and interest to a variety of dishes, from a simple Swiss cheese and roast chicken sandwich to a vegetarian hummus wrap to a salad of mushroom, onion, and kale. The possibilities are endless.

Ingredients

  • 3 large red bell peppers

Directions

  • Preheat oven to 450°F. Take out a baking sheet and set aside.
  • Lightly spray baking sheet with oil and place peppers on the sheet. Place baking sheet on middle rack in oven and bake 25–30 minutes, turning often, until skins are bubbled and beginning to char.
  • Remove baking sheet from oven and place on wire rack to cool briefly. Once peppers are cool enough to handle, gently remove skins. Halve peppers and remove core and seeds.
  • Use immediately or store in an airtight container and refrigerate until use. These freeze well for up to 3 months.
