Whole-Wheat Chapati

Chapati is a simple Indian flatbread that pairs well with vegetable stews and bean dishes.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • 1 tsp. salt
  • 2 Tbsp. olive oil
  • ¾ cup hot tap water

Directions

  • Whisk together all-purpose flour, whole-wheat flour, and salt. Mix in olive oil. Gradually add water, stirring until mixture comes together as a soft dough. Turn onto a floured surface and knead until smooth.
  • Cut dough into 10 pieces and roll each into a ball. Cover and allow to rest for 5 minutes. Roll dough out into thin, 8"–10" circles on a lightly floured surface.
  • Heat a heavy skillet over medium heat. Once pan is hot, oil lightly, and cook chapatis for about 1 minute on each side and edges are beginning to char. Keep warm while others are cooked.
