Whole-Wheat Pumpkin-Apple Muffins

Ingredients

  • 2 1⁄2 cups whole wheat flour
  • 2 cups honey
  • 1 Tbsp. pumpkin pie spice
  • 1 tsp. baking soda
  • 1⁄2 tsp. salt
  • 2 large eggs
  • 1 cup puréed pumpkin
  • 1⁄2 cup applesauce
  • 2 cups shredded apples

Directions

  • In a large bowl, combine all ingredients except apples. Mix well. Fold in apples. Pour into paper-lined muffin tins.
  • Bake at 350°F for 35 minutes. Serve warm or at room temperature.
