Whole-Wheat Pumpkin-Apple Muffins
You can make several batches of muffins and freeze them. Then you have a ready supply of healthy after-school snacks!

- 2 1⁄2 cups whole wheat flour
- 2 cups honey
- 1 Tbsp. pumpkin pie spice
- 1 tsp. baking soda
- 1⁄2 tsp. salt
- 2 large eggs
- 1 cup puréed pumpkin
- 1⁄2 cup applesauce
- 2 cups shredded apples
- In a large bowl, combine all ingredients except apples. Mix well. Fold in apples. Pour into paper-lined muffin tins.
- Bake at 350°F for 35 minutes. Serve warm or at room temperature.
