Traditionally, these cookies are made into 3" circles, although you can cut them into any shape you would like.

Makes: 48 cookies
- 1 cup margarine
- 1 cup sugar
- 1 large egg
- 1 tsp. salt
- 4 cups all-purpose flour
- ¼ cup sweet sherry
- Preheat oven to 350°F.
- Mix together the margarine and sugar until creamy. Add the egg and beat until the mixture is light and fluffy.
- Blend in the salt and 2 cups of the flour. Stir in the sherry. Add the remaining 2 cups of flour and mix well.
- Chill in the refrigerator for 1 hour or until firm. Roll out the dough on a lightly floured surface until it’s about ⅛" thick. Cut with cookie cutters.
- Place on a lightly greased baking sheet and bake for 10 minutes.
