Ingredients

  • 1 cup yellow split peas
  • 3 cups water
  • 1 cup zucchini, shredded and squeezed dry
  • 1⁄4 cup onion, chopped
  • 1⁄4 cup black olives
  • 3 tbsp. sun-dried tomatoes, drained
  • 2 cloves garlic, minced
  • 1 large egg
  • 1⁄4 cup almond flour
  • 1⁄4 cup corn meal
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1⁄4 tsp. cayenne pepper
  • 1⁄4 tsp. pepper
  • 3 tbsp. olive oil
  • 6 burger buns
  • 1 tomato, sliced
  • 6 pieces lettuce
  • 1 red onion, sliced

Directions

  • In a medium saucepan, add split peas and water, then bring to a boil. Reduce heat to a simmer, then cook, uncovered, for about 20-30 minutes. Transfer to a plate or large bowl to cool completely.
  • In the bowl of a food processor, add cooled split peas, zucchini, onion, olives, tomatoes and garlic. Process until combined and mostly smooth. Add egg and process until incorporated.
  • In a medium bowl, stir almond flour, corn meal, paprika, salt, cayenne pepper and pepper together. Add split pea mixture and stir until combined.
  • Divide mixture into six portions, then shape into patties.
  • In a large nonstick skillet over medium heat, add oil. Once hot, add patties and cook until browned, about 3 minutes on each side.
  • Serve on buns with tomatoes, lettuce and onion. Refrigerate leftovers.
