This is a batter that basically bakes into a beef-flavored popover. It is the traditional partner to roast beef or prime rib. It can be baked in the roasting pan, or in muffin tins for individual puddings.

- ½ cup beef fat (drippings from a beef roast)
- 2 cups milk
- 4 eggs
- 1 tsp. salt
- 2 cups all-purpose flour
- Preheat oven to 400°F. Divide beef fat evenly among 8 muffin tin cups.
- Combine remaining ingredients in a blender or bowl with a whisk. Pour the batter into the muffin tin cups that have been prepared with beef fat.
- Bake 15 minutes. Reduce the oven temperature to 350°F; bake 15 minutes more.
