Yorkshire Pudding

This is a batter that basically bakes into a beef-flavored popover. It is the traditional partner to roast beef or prime rib. It can be baked in the roasting pan, or in muffin tins for individual puddings.

  • 1⁄2 cup beef fat (drippings from a beef roast)
  • 2 cups milk
  • 4 eggs
  • 1 tsp. salt
  • 2 cups all-purpose flour


  • Preheat oven to 400°F. Divide beef fat evenly among 8 muffin tin cups.
  • Combine remaining ingredients in a blender or bowl with a whisk. Pour the batter into the muffin tin cups that have been prepared with beef fat.
  • Bake 15 minutes. Reduce the oven temperature to 350°F; bake 15 minutes more.
