Zoodle Ramen

Sauteed zucchini noodles are stirred up with a delicious soft-boiled egg for additional protein and flavor!

Ingredients

  • 1 Tbsp. sesame oil
  • 1 clove garlic, minced
  • ½ cup sliced mushrooms
  • 1 large zucchini, spiralized
  • 2 cups beef broth
  • 1 large egg
  • 1 Tbsp. chopped chives
  • 1 tsp. salt
  • ½ tsp. freshly ground black pepper

Directions

  • In a medium-sized sauté pan over medium heat, add the sesame oil and garlic sautéing until aromatic, approximately 2–3 minutes. Add mushrooms and cook until golden brown, stirring occasionally. Add zucchini noodles to pan and turn off heat.
  • While cooking the mushrooms, place broth in a second pot, bring to a boil. Once boiling, crack egg in broth and allow to soft-cook until whites are fully cooked. Pour broth and egg into pan with mushrooms and noodles. Top with chives, season with salt and pepper, and serve.
