Zoodle Ramen

Sauteed zucchini noodles are stirred up with a delicious soft-boiled egg for additional protein and flavor!

  • 1 Tbsp. sesame oil
  • 1 clove garlic, minced
  • 1⁄2 cup sliced mushrooms
  • 1 large zucchini, spiralized
  • 2 cups beef broth
  • 1 large egg
  • 1 Tbsp. chopped chives
  • 1 tsp. salt
  • 1⁄2 tsp. freshly ground black pepper


  • In a medium-sized sauté pan over medium heat, add the sesame oil and garlic sautéing until aromatic, approximately 2 to 3 minutes. Add mushrooms and cook until golden brown, stirring occasionally. Add zucchini noodles to pan and turn off heat.
  • While cooking the mushrooms, place broth in a second pot, bring to a boil. Once boiling, crack egg in broth and allow to soft-cook until whites are fully cooked. Pour broth and egg into pan with mushrooms and noodles. Top with chives, season with salt and pepper, and serve.
