Zucchini Ragout

Ingredients

  • 3 medium zucchini, diced
  • ½ cup diced onion
  • 6 cloves garlic, halved
  • 2 stalks celery, diced
  • 2 medium carrots, peeled and diced
  • 1 medium parsnip, peeled and diced
  • 3 Tbsp. tomato paste
  • ¼ cup water
  • ¼ tsp. kosher salt
  • 1 tsp. freshly ground black pepper
  • 1 Tbsp. minced basil
  • 1 Tbsp. minced Italian parsley
  • 1 Tbsp. minced oregano
  • 3 cups cooked rice
  • 2 Tbsp. chopped scallions

Directions

  • Place zucchini, onion, garlic, celery, carrot, parsnip, tomato paste, water, salt, pepper, basil, parsley, and oregano into a 4- to 5-quart slow cooker. Stir. Cook on low for 4 hours. Toss rice with scallions and serve with ragout.
