Zucchini-Walnut Bread

Ingredients

  • 2 large eggs, lightly beaten
  • 1⁄2 cup canola oil
  • 1 1⁄2 cups grated zucchini
  • 2 tsp. vanilla
  • 1 1⁄2 cups white whole-wheat flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. ground cardamom
  • 1⁄2 cup sugar
  • 1 tsp. ground cinnamon
  • 1⁄2 tsp. ground cloves
  • 1⁄2 tsp. ground nutmeg
  • 1⁄2 tsp. ground ginger
  • 1⁄2 cup chopped walnuts

Directions

  • Preheat oven to 350°F. Grease a standard loaf pan with non-stick cooking spray.
  • In a large bowl, combine the eggs, oil, zucchini, and vanilla. In a small bowl, stir together the flour, salt, baking powder, sugar, and spices. Add to the zucchini mixture. Stir until just combined. Fold in walnuts.
  • Pour into the prepared loaf pan.
  • Bake 1 hour, or until a toothpick inserted in the middle of the loaf comes out with just a few dry crumbs. Place the pan on a wire rack for 10 minutes. Invert the loaf onto the rack and cool fully.
