Air Fryer Caprese Stuffed Portobello Mushrooms

Ingredients
- 3 tbsp. olive oil, divided
- 1 clove garlic, minced
- 1⁄4 tsp. salt
- 1⁄4 tsp. pepper
- 4 portobello mushrooms, stems and gills removed
- 1 cup cherry tomatoes, halved
- 1⁄2 cup fresh mozzarella pearls
- 1⁄4 cup fresh basil, chiffonade
- 2 tsp. balsamic vinegar
Directions
- Heat air fryer to 350°F.
- In a small bowl, combine 2 tablespoons olive oil, garlic, salt and pepper. Brush over portobello mushrooms. Place in air fryer and cook 5-8 minutes, until softened.
- Meanwhile in a medium bowl, stir tomatoes, mozzarella, basil and remaining 1 tablespoon olive oil together. Once mushrooms are softened, remove from air fryer and fill with tomato mixture.
- Place back in air fryer and cook about 10 minutes, until cheese is melted and tomatoes are wilted.
- Drizzle mushrooms with balsamic vinegar and serve. Refrigerate leftovers.
