Rice and Beans - Red Beans

Ingredients

  • 2 tablespoons olive oil
  • 1 onion
  • 1 bell pepper
  • 4 celery stalks
  • 2 carrots, chopped 1/2"
  • 4 cloves garlic
  • 6 pounds red beans
  • 1 whole bay leaf
  • 1⁄2 tablespoon smoked paprika
  • pinch cayenne pepper, 1/8 tsp.
  • 1 teaspoon pepper
  • 16 ounces vegetable broth
  • 2 quarts water
  • 2 tablespoons cilantro
  • 2 tablespoons garlic salt
  • 1⁄2 cup chili paste
  • 1 tablespoon salt and pepper

Directions

  • Soak beans in hot water for 45 min.
  • Bring one gallon of water to boil in separate pot.
  • Add beans to boiling water and cook for 90 minutes.
  • Heat olive oil in a second pot.
  • Add onions, bell peppers, celery, carrots and garlic. Sautee until golden brown.
  • Add all spices and chili paste.
  • Stir well; add cooked beans and vegetable broth.
  • Cook for five minutes to mix broth and beans.
