Rice and Beans - Red Beans

Ingredients
- 2 tablespoons olive oil
- 1 onion
- 1 bell pepper
- 4 celery stalks
- 2 carrots, chopped 1/2"
- 4 cloves garlic
- 6 pounds red beans
- 1 whole bay leaf
- 1⁄2 tablespoon smoked paprika
- pinch cayenne pepper, 1/8 tsp.
- 1 teaspoon pepper
- 16 ounces vegetable broth
- 2 quarts water
- 2 tablespoons cilantro
- 2 tablespoons garlic salt
- 1⁄2 cup chili paste
- 1 tablespoon salt and pepper
Directions
- Soak beans in hot water for 45 min.
- Bring one gallon of water to boil in separate pot.
- Add beans to boiling water and cook for 90 minutes.
- Heat olive oil in a second pot.
- Add onions, bell peppers, celery, carrots and garlic. Sautee until golden brown.
- Add all spices and chili paste.
- Stir well; add cooked beans and vegetable broth.
- Cook for five minutes to mix broth and beans.
